  • 8 cups chicken or vegetable broth
  • 1 lb shrimp, peeled and deveined
  • 8 oz rice noodles
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 2 cups bean sprouts
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup basil leaves
  • 1/4 cup mint leaves
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1-inch piece ginger, sliced
  • 1 cinnamon stick
  • 2 star anise
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Lime wedges for serving


  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant, about 2 minutes.
  2. Add the chicken or vegetable broth to the pot, along with the cinnamon stick and star anise. Bring to a simmer and let it cook for 15-20 minutes to allow the flavors to meld.
  3. While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
  4. Season the broth with fish sauce, soy sauce, salt, and pepper to taste. Adjust the seasoning as needed.
  5. Add the shrimp to the broth and cook until they turn pink and opaque, about 3-4 minutes.
  6. To serve, divide the cooked rice noodles among serving bowls. Top with the shrimp, sliced carrots, bell pepper, bean sprouts, green onions, cilantro, basil, and mint leaves.
  7. Ladle the hot broth over the noodles and garnish with additional herbs if desired. Serve hot with lime wedges on the side.
