Ingredients:

  • 1 pound beef brisket
  • 1 pound beef sirloin or eye of round steak
  • 1 pound beef meatballs
  • 8 cups beef broth
  • 1 onion, thinly sliced
  • 3-inch piece of ginger, sliced
  • 4 star anise pods
  • 2 cinnamon sticks
  • 4 cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon sugar
  • 2 tablespoons fish sauce
  • Rice noodles
  • Bean sprouts
  • Fresh herbs (Thai basil, cilantro, mint)
  • Lime wedges
  • Hoisin sauce and Sriracha sauce (optional)

Instructions:

  1. Prepare the Broth:
    • In a large pot, add the beef broth, onion slices, ginger slices, star anise pods, cinnamon sticks, cloves, coriander seeds, and fennel seeds.
    • Bring the broth to a boil, then reduce the heat and simmer for at least 30 minutes to allow the flavors to infuse.
  2. Cook the Beef Brisket:
    • Place the beef brisket in a separate pot and cover it with water. Bring the water to a boil and cook the brisket for about 1-2 hours until it becomes tender.
    • Once cooked, remove the brisket from the pot and let it cool. Slice the brisket into thin, bite-sized pieces.
  3. Prepare the Rare Beef:
    • Freeze the beef sirloin or eye of round steak for about 30 minutes to make it easier to slice.
    • Take the partially frozen beef out of the freezer and slice it as thinly as possible. Set the beef slices aside.
  4. Cook the Meatballs:
    • If using pre-made beef meatballs, follow the instructions on the package to cook them.
    • Alternatively, you can make your own beef meatballs by combining ground beef, minced garlic, minced onion, breadcrumbs, egg, salt, and pepper. Shape the mixture into small meatballs and cook them in simmering broth until they are fully cooked.
  5. Prepare the Rice Noodles and Garnishes:
    • Cook the rice noodles according to the package instructions. Drain and set them aside.
    • Rinse the bean sprouts and chop the fresh herbs.
  6. Assemble the Pho Bowls:
    • Divide the cooked rice noodles among serving bowls.
    • Arrange the sliced beef brisket, rare beef slices, and meatballs on top of the noodles.
    • Ladle the hot broth over the ingredients in each bowl, ensuring they are fully submerged.
    • Allow the hot broth to cook the rare beef slices until they reach your desired doneness.
    • Serve the Pho bowls with bean sprouts, fresh herbs, lime wedges, and optional condiments like hoisin sauce and Sriracha sauce.

Enjoy the authentic flavors of Pho by mixing the ingredients in your bowl and adding bean sprouts, fresh herbs, and a squeeze of lime.
